When touring in Normandy we met up with a famous local specialty which, curiously enough, proved to be our very own sand tarts.

Recipe Ingredients for Sand Tarts


Beat until soft:
3/4 cup butter

Add gradually and blend until creamy:
1/4 cup white sugar

Beat in:
1 egg
1 egg yolk
1 tsp vanilla
1 tsp grated lemon rind

Sift before measuring:
3 cups flour

Resift with:
1/4 tsp salt

Recipe Directions for Sand Tarts

  1. Stir the flour gradually into the butter mixture until well blended. The last of the flour may have to be kneaded by hand. Chill the dough several hours.

  2. Preheat oven to 400F.

  3. Roll the dough until very thin. Cut into founds and place on greased cookie sheets. Brush the tops of the cookies with the white of an egg and sprinkle generously with sugar.

  4. Bake about 8 minutes. You can substitute white sugar with 1 1/3 cups of packed brown sugar.
