Easy, can serve cold on a hot day. If you are in a hurry, use a roast chicken from the deli/grocery.

Recipe Ingredients for sam's tomato chicken stacks

3 cups chicken breast, meat only
1 large tomato, sliced
3 oz kraft free shredded cheese
2 tsp olive oil
4 tsp balsamic vinegar or juice of one lime
2 tsp basil

Recipe Directions for sam's tomato chicken stacks

on each plate put 1/4 of the tomato slices. top with 1/4 of the chicken (3/4 cup), then sprinkle with the shredded cheese. sprinkle with dried or fresh basil, drizzle with olive oil, and then balsamic vinegar (or squeeze 1/4 of a lime over the top). Salt and pepper to taste. YUM!!!!
