Recipe Ingredients for sam's coconut curry chicken

1/2 tablespoon curry powder
1/4 teaspoon red pepper flakes
16 oz chicken breast, meat only
4 oz coconut milk,canned
1/3 cup skim milk
1 tablespoon soy sauce
1/2 tablespoon Splenda no calorie
1 tablespoons lemon juice
1/2 cup water chestnuts
1 cup green beans, canned french style

Recipe Directions for sam's coconut curry chicken

  1. spray nonstick pan with spray, heat

  2. add chicken, sprinkle chicken pieces with curry powder and red pepper flakes.

  3. brown chicken, then pour in coconut milk. Add remaining ingredients except for beans and water chestnuts, stir to combine thoroughly.

  4. Cover and simmer for 45 minutes. Add vegetables, cook until they are heated through. Serve over brown rice if desired (brown rice nutritional info not included).
