Recipe Ingredients for sam's cinnamon apple cookies

3/4 cup whole wheat flour
1/4 cup soy flour
1/2 cup fiber one cereal
1 tablespoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 1/4 cup applesauce, unsweetened
2 oz light and fit nonfat vanilla yogurt
1/4 cup splenda no calorie substitute
1/4 cup egg beaters
1/2 teaspoon vanilla extract
1 tsp cinnamon, ground
1/2 tsp nutmeg, ground

Recipe Directions for sam's cinnamon apple cookies

  1. Preheat oven to 350 degrees F (175 degrees C). Spray cookie sheet with nonstick spray.

  2. Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together splenda, egg beaters and vanilla. Stir in the applesauce and vanilla, add fiber one cereal; allow to soften. Stir apple mixture into flour until just combined. Spoon onto cookie sheet, about 1 inch apart.

  3. Bake in preheated oven for 15 to 20 minutes. Let cool before serving. For best flavor, place in an airtight container or bag overnight. Can be frozen and then reheated, if you like!
