Healthy, oil-free Indian samosa wraps

Recipe Ingredients for Samosa wraps

450 g potatoes
300 g tofu
1 t canola oil
1 onion
1 c frozen green peas
1 tomato
1 T ginger
1 t chilli powder
350 g baby spinach
1/2 c water
2 t curry powder
1 t cumin
1/4 t cayenne
1 T lemon juice
5 serving Old El Paso wholemeal tortilla

Recipe Directions for Samosa wraps

  1. Press and cube tofu.

  2. Scrub potatoes. Poke several holes in each and cook in microwave until tender. Let cool and dice.

  3. Spray non-stick skillet lightly with canola oil. Once heated, add chopped onion and cook until it begins to brown. Add ginger and chilli and cook for a further minute.

  4. Add peas, tomato and 2 T water. Cook until peas thaw.

  5. Add in potatoes, tofu, spinach, spices, remaining water and lemon juice. Cover and simmer for about 10 minutes until most of the water has evaporated.

  6. Wrap filling in wholemeal tortilla and enjoy.
