Vegetable relish for spreading on toast or as a seasoning for mildly flavored proteins (chicken breast, tofu, cod, etc)

Recipe Ingredients for Samfaina

1 eggplant, medium, peeled and diced small
3 tablespoons oil, olive
2 onions, medium, very finely chopped
4 clove garlic
2 bell peppers, red, peeled, seeded, finely chopped
1 zucchini, medium, finely chopped
2 teaspoons pepper ,black to taste
14 oz tomatoes, canned drained

Recipe Directions for Samfaina

  1. Lay diced eggplant on double layer of paper towels; sprinkle with salt and set aside while prepping other vegetables (at least 30 minutes)

  2. Heat 2 tablespoons oil in dutch oven over medium heat. When hot (not smoking), add onions and cook, stirring often, until they soften, about 8 minutes. Add a generous pinch of salt and garlic and stir for about 30 seconds.

  3. Add last tablespoon of oil, then eggplant, bell peppers, zucchini and black pepper. Turn heat to low, cover and cook until vegetables are soft, about one hour, stirring occasionally. Adjust heat if sticking.

  4. Stir in the tomatoes, seasoning with salt , cover again and cook until the mixture has reduced to a thick relish, 2 - 3 more hours, stirring occasionally.

  5. Before serving, rest uncovered for at least 1 hour, or better yet, when cool, cover and refrigerate overnight. Allow to come to room temperature before serving.
