Only difference is that no margarine is used but the light spray. And each phyllo sheet is cut into 2, edges folded over and then folded diagonally.

Recipe Ingredients for Same as Spinache and Chicken Rolls, but Triangles

1 large onion
10 oz frozen chopped spinach
1 cup finely chopped cooked chicken breast
1/2 cup finely crumbled feta cheese
1/4 cup fresh dill
1 egg white
1/2 tsp salt
1/2 tsp ground pepper
12 1/2 sheets phyllo pastry
1 light olive oil spray

Recipe Directions for Same as Spinache and Chicken Rolls, but Triangles

  1. Heat some olive oil spray in a large nonstick skillet over medium heat. Add the onion and cook, stirring frequently until golden for about 7 minutes.

  2. Combine the onion, spinach, chicken, feta cheese, dill, egg white, salt, and pepper in a medium bowl until well mixed.

  3. Preheat oven to 375 degrees F. Spray 2 jelly-roll pans or baking sheets with nonstick spray.

  4. Place 1 phyllo sheed on a work surface. Cover the remaining sheets of phyllo with plastic wrap to keep them from drying out as you work. Lightly spray the phyllo sheet with nonstick spray. Put a rounded tablespoon of the spinach mixture in the center of each phyllo width-wise and fold the left and right sides ove. Firmly fold the phyllo diagonally to the end of the strip. Place the phyllo rolls seam-side down, in a jelly-roll pan. Cover with a damp paper towel to protect the phyllo from drying out. Repeat with the remaining phyllo sheets.

  5. Bake the rolls until the phyllo is puffed and golden, about 15 minutes. Serve hot, warm or at room temperature.
