Sambar is a vegetable stew or chowder based on a broth made with tamarind and pigeon peas, and is very popular in the cooking of southern regions of India especially in Tamil Nadu, Kerala, Karnataka and Andhra Pradesh. Each state in South India prepares it with a typical variation, adapted to its taste and environment.

Recipe Ingredients for Sambar, Kerala Style

50 g Toor Dal
100 grams Carrots
25 grams Sambar
1 cup Okra
1 Potato large (3" to 4-1/4" dia) Potato, Flesh And Skin
2 medium Tomatoes
1 cup, sliced Onions
30 grams Peppers
10 grams Tamarinds
1 cup, chopped Cabbage
1 tbsp Parsley
1 cup Spinach
1/2 cup slices Beets
1 tsp Salt, Table
1 cup Beans, Fava, In Pod
1 serving Egg Plant Relish Brinjal
1 1tsp Vegetable Oil, Coconut
5 grams Mustard Seeds, Brown

Recipe Directions for Sambar, Kerala Style

  1. Chop all vegetables into dices

  2. Boil lentil or toor dal with a pinch of turmeric powder and salt.

  3. Sort vegetables according to the time required for getting cooked into groups

  4. Now add each group to the boiled toor dal after 4-5 minutes of boiling

  5. After adding all vegetables add sambar powder.

  6. [Optional] Add red chilli powder if you want it more spicy

  7. Fry the mustards in a skillet with a teaspoon of oil.

  8. In a tablespoon of water, dissolve tamarind paste and add this to our sambar soup, and enough salt.

  9. Finally add the fried mustard to the soup and serve hot
