Tomatoes onions, garlic and ginger stewed to make a spicy, tangy sauce. Use as is as a side for coconut rice or add in browned chicken, meat, raw prawns or diced firm tofu and cook to till tender.

Recipe Ingredients for Sambal

2 tbsp canola oil
270 g red onion, halved and sliced
12 g ginger, thinly sliced
3 cloves garlic
800 g canned chopped tomatoes
200 ml water
100 g sambal oelek
1 tbsp brown sugar
1 tbsp lemon juice (lime and tamarind are good too)
3/4 tsp salt

Recipe Directions for Sambal

  1. Heat oil. Saute onions, ginger and garlic till tender and caramelised.

  2. Add in salt, sambal oelek and tomatoes and cook covered for 30mins on low-medium heat.

  3. Add in sugar and lime juice (and any browned meat, raw prawns, tofu) and cook uncovered for approx 15min (longer if you want the meat to be very tender. If using chicken you can use pieces of chicken with the bone in that have been browned with a little salt before hand. Cook till meat is falling off the bone).
