A healthy easy dinner that will provide easy leftovers. Good served with a salad. Feel free to add salt or other seasonings. I am trying to cut salt out of my diet.

Recipe Ingredients for Samantha's Low Fat Quiche

2 eggs
3 egg whites
2 tbs fat-free ricotta cheese
1 tbs fat-free sour cream
4 tsp low-fat Parmesan cheese
6 artichoke hearts
1/4 cup green pepper
1/2 cup diced chicken breast
1/8 cup fat free mozzarella cheese
1/2 tsp pepper
1/4 tsp hot pepper
1 whole wheat tortilla
3/4 cup mashed potatoes
1/2 cup skim milk

Recipe Directions for Samantha's Low Fat Quiche

  1. Preheat oven to 375

  2. Spray a tin with Pam

  3. Place tortilla at the bottom

  4. spread a thin layer of mashed potatoes

  5. mix eggs, egg whites, milk, ricotta, sour cream, Parmesan, pepper and hot pepper together

  6. lay vegetables (the green peppers in the recipe are actually frozen green/red peppers and onion mixed together) on top of the potato in pan

  7. Add chicken

  8. Add Mozzarella

  9. Pour egg mixture over it all

  10. Bake in oven until set (about 30-40 minutes)
