600 grams Cassava
600 grams Chicken, Breast, Meat Only

Recipe Directions for Salty chicken with yucca

  1. Season chicken with salt and pepper, boil and shred (No food processor? Ok, shred the chicken using 2 forks while still hot, it's quicker);

  2. Boil cassava with some salt and mash with a fork;

  3. Mix cassava and chicken until smooth;

  4. Divide in 6 portions (about 200g each);

  5. Mold portions as you'd like (I make little squares);

  6. Mix egg whites with saffron and brush you portions with it;

  7. Bake in oven until slightly stiff, about 20 min.
