Salsa Verde Recipe

Salsa only - makes about 24 1/4-1/3 c servings

Recipe Ingredients for Salsa Verde

3 lbs tomatillos
4 jalapeno peppers
4 serrano peppers
1 c fresh cilantro
2 tbsp cumin seeds
2 tsp salt
1 medium onion

Recipe Directions for Salsa Verde

  1. cut the onion in large chunks.

  2. Take the husks off the tomatillos & rinse.

  3. Take the stems off the jalapeņos & rinse.

  4. Boil the onion, tomatillos & jalapeņos until soft but not falling apart, about 15-20 min.

  5. Drain carefully (the tomatillo skins are fragile).

  6. Blend at "liquefy" with the cilantro (torn or chopped into about 3-4" chunks) and whole cominos (cumin seeds). Add salt & blend again (might need more salt but I would rather err on the side of "bland").

  7. Chill & serve, or add to carnitas or chicken breast and boil for about 20-30 min. Makes a nice main dish.
