This works well to make one serving at a time in a small skillet if you are cooking for one.

Recipe Ingredients for Salsa Skillet

1 yellow squash
1 sweet potato
1 cup cooked rice
1 cup broccoli
1 cup carrots
1/2 cup salsa

Recipe Directions for Salsa Skillet

  1. Cook the vegetables except for the sweet potatoes, which are already steamed, in a small amount of water until al dente.

  2. Add the rice when just a small amount of water is left.

  3. Add the salsa and sweet potatoes. I also add a little seasoning (cumin, coriander, and chili powder) and oregano.

  4. It's done when it's all heated through.
