I make it either sweet nmild or 'kickin'. If I make it hot, I use the canned tomoatoes that have zesty jalapenos in them and add more peppers and red pepper flakes.

Recipe Ingredients for Salsa

29 ounce canned tomatoes
2 medium bell peppers, green
1 jalapeno pepper, seeded some
1 medium vidalia onion
8 ounce canned pineapple chunks, save half juice or
4 cloves fresh garlic
2 tbsp dried cilantro
2 tbsp fresh black pepper
1 tbsp italian seasoning, to taste

Recipe Directions for Salsa

  1. For SweetnMild

  2. Put onion and (only) green peppers into food processor and pulse a few times, for a smoother finished salsa.

  3. Add Pineapples with the juice, then the tomoatoes. Pulse a few times for a few seconds each time to blend.

  4. Add in the spices. For the sweet, you can leave out the cilantro. A pinch or so of Basil is a nice compliment to the sweet.

  5. You can of course put heat into this version. But peppers and garlic just are a taste on there own and you end up with too much going on with both. The red pepper flakes help add some heat with little flavor change, though.

  6. For 'Kickin'

  7. Slice Jalapenos into processor first (you can also add in other hot peppers here).

  8. Add in the garlic. Chop it some first if you dont want alot of chunks of it.

  9. Add in cans of tomatoes and the cilantro.

  10. Pulse a few times. (I call this 'pre-heating' it. I let this sit for a few minutes to get the heat all through the tomato base.)

  11. Add peppers and onions and pulse until they are desired chunkiness.

  12. Add Spices. I go heavy on black pepper and red pepper flakes. For more heat, ground cayenne pepper can also be used.

  13. Either of these is better eaten the next day. Put it in a bowl and let it rest in the refrigerator, overnight if possible.
