this is the salsa I used in the pork shoulder this Christmas (2009).

Recipe Ingredients for Salsa Colorada

6 pounds roma tomatoes
2 pounds jalapeno peppers
2 medium yellow onions
2 tsp salt
1 cup cilantro
1 tbsp cumin seeds

Recipe Directions for Salsa Colorada

  1. boil the jalapeņos (whole, stems taken off), onions (cut into chunks) and tomatoes (whole) till just soft.

  2. Blend with cilantro, salt & cumin seeds.

  3. Refrigerate until ready to use.

  4. *this is pretty hot.
