A delicious, low calorie entree. Good served over white (or brown for more nutrition) rice with a side of corn.

Recipe Ingredients for Salsa Chicken

16 oz Chicken, Breast, Meat Only
2 tsp Old El Paso Seasoning Mix Taco
11.66 tbsp Salsa
0.67 cup, shredded Low Fat, Cheddar Or Colby Cheese

Recipe Directions for Salsa Chicken

  1. Preheat oven to 475.

  2. Combine chicken and seasoning in a medium bowl, tossing to coat.

  3. Heat a large nonstick skillet coated with cooking spray over medium-high heat.

  4. Add chicken; cook for 4 minutes or until browned, stirring occasionally.

  5. Arrange chicken in an 8-inch square baking dish coated with cooking spray; top with salsa, cheese, and chiles. Bake at 475 for 8 minutes or until chicken is done and cheese is melted.

  6. Each serving also can be topped with green chile peppers, sour cream, and olives if desired.
