Recipe Ingredients for Salsa-Cheddar Chicken

16 oz Fresh Boneless Skinless Chicken Breasts
2 tbsp Kraft Light Dressing -Zesty Italian with Ex Virgin O
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1 large whole (3" dia) Tomatoes, Red, Ripe
8 oz Salsa
4 oz Cheddar Mild 2% Milk Finely Shredded Reduced Fat
2 cup Rice, Brown, Medium-grain, Cooked

Recipe Directions for Salsa-Cheddar Chicken

  1. Heat dressing in large skillet on med. heat. Add chicken; cover. Cook 4-5 min. on each side or til lightly browned. Remove from skillet; cover to keep warm.

  2. Add peppers & cook 5 min. stirring often. Stir in tomatoes and salsa. Return chicken to skillet; simmer, covered, on med-low heat 10 min. or until chicken is done.

  3. Top with cheese; cook, covered, 4-5 min. or until melted. Serve over rice.
