Recipe Ingredients for Salmon on Wilted Spinach Compote

3 1/2 oz Wild Coho Salmon
2 cups baby spinach - raw
10 cherry tomatoes
2 large button mushrooms
2 tablespoons lemon juice

Recipe Directions for Salmon on Wilted Spinach Compote

  1. Put frozen salmon on small plate and microwave for 2 minutes on high.

  2. Place spinach on dinner plate.

  3. Slice mushrooms and tomatoes on top of spinach.

  4. Top with salmon.

  5. Pour remaining lemon juice over salmon and compote.

  6. Microwave for no more than two minutes.

  7. Remove and serve on dinner plate.
