Indulgent stuff but a doddle to do... and hey... a good workout at the gym for 45 minutes (or an hour and a quarter brisk walking) will burn it off.

Recipe Ingredients for Salmon with a White Wine and Dill Sauce

454 g salmon fillet
125 ml dry white wine
1 tbsp double cream
1 tsp dill
454 g broccolli, steamed
227 g sugar snap peas
2 tsp butter

Recipe Directions for Salmon with a White Wine and Dill Sauce

  1. Preheat oven to 200 degrees celsius.

  2. Place salmon fillets in an ovenproof dish and add the white wine.

  3. Sprinkle the dill over the salmon and into the white wine.

  4. Cover with foil and poach the salmon for around 20 minutes.

  5. When the salmon is done, transfer the fillets to warmed serving plates. Pour the fish stock into a small saucepan and heat gently stirring in the double cream. Pour the sauce over the salmon fillets.

  6. Serve with buttered brocolli and sugar snap peas.
