Recipe Ingredients for Salmon with Vegetables

420 g salmon
2 tbsp lemon juice
1 tbsp minced ginger
1 tbsp minced garlic
1 cup frozen vegetables
1/2 cup diced tomato

Recipe Directions for Salmon with Vegetables

  1. Place salmon in a foil envelope.

  2. Mix vegetables, tomatoes, ginger, garlic and lemon juice in a bowl. Season with salt and pepper and your favorite spices. I like using an Italian blend of spices (typically oregano, basil, thyme, ect.).

  3. Place vegetable mixture on top of salmon. Close the foil envelope.

  4. Broil at 375 degress for 20 minutes.
