A wicked, healthy and simple stir-fry

Recipe Ingredients for Salmon Tofu Stir-fry

250 grams of whole wheat spaghetti
150 grams of salmon
125 grams of firm tofu
125 grams of mushrooms
1 medium red pepper
1 small zucchini
1 tbsp of olive oil
40 grams of rice wine
30 grams of light soya sauce
70 grams of teriyaki sauce
3 tsp of sugar

Recipe Directions for Salmon Tofu Stir-fry

  1. chop up all the cuttable ingredients into bite size pieces

  2. Bring about 3 - 4 cups of water to boil, when at boiling point add pasta, and let simmer, until cooked, then drain from water and put aside

  3. Heat pan with olive oil a little above medium heat, then add red pepper, wait till about 3 minutes, then add zucchini, wait till they start to soften, then add tofu, then mushroom, then salmon

  4. Add the rice wine and let ingredients in the pan simmer for a couple minutes,

  5. Now add the teryaki and soya sauce, and let simmer on reduced heat for 1 - 2 minutes

  6. Sprinkle the sugar on top and stir

  7. Mix the cooked pasta with the pan ingredients in a big bowl

  8. Serve
