From Country Woman magazine. The original recipe called for 1 T melted butter, I substituted olive oil.

Recipe Ingredients for Salmon Tartlets

1/2 cup butter
3 ounces cream cheese
1 cup flour
2 eggs
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 cup dry bread crumbs
1 1/2 teaspoons dried parsley flakes
1/2 teaspoon rubbed sage
1/2 teaspoon salt
1/4 teaspoon pepper
14 3/4 ounces salmon
1 green onion

Recipe Directions for Salmon Tartlets

  1. In a mixing bowl, beat butter, cream cheese, and flour until smooth.

  2. Shape tablespoonfuls of dough into balls; press onto the bottom and up the sides of greased minature muffin cups.

  3. In a bowl, combine eggs, milk, olive oil, and lemon juice.

  4. Stir in crumbs, parsley, sage, salt, and pepper.

  5. Fold in salmon and onion. Spoon into shells.

  6. Bake at 350 for 30-35 minutes or until browned.

  7. Makes 2 dozen.
