Salmon tacos with a slaw made of roasted asparagus, tomatillos and peppers, served with a drizzle of chipotle sauce.

Recipe Ingredients for Salmon Tacos with Roasted Asparagus Tomatillo Slaw

10 corn tortillas
12 oz salmon
1/2 red bell pepper
1/2 yellow bell pepper
1/2 red onion
6 oz asparagus
3 oz yogurt
1 tbsp olive oil
1 tomatillo
1 roma tomato
1 tsp ground cumin
1 tsp brown sugar
1/2 tsp chili powder
1/2 tsp ground coffee
1 chipotle pepper
1 tsp adobo sauce
1/2 tsp salt
1 tsp black pepper

Recipe Directions for Salmon Tacos with Roasted Asparagus Tomatillo Slaw

  1. Julienne peppers, onion and asparagus. Dice tomatoes and tomatillos.

  2. Mix yogurt, dash salt, chipotle pepper and adobo sauce with immersion blender.

  3. Combine cumin, brown sugar, chili powder and ground coffee.

  4. Pat salmon fillet dry, spice with salt and pepper, brush with olive oil on both sides, then rub with spice combination.

  5. Toss asparagus with olive oil, sprinkle with salt and pepper and place on highest rack under broiler for about 8 minutes or until done.

  6. In a nonstick skillet cook salmon over medium heat for 5 minutes per side until done (depends on thickness of fillet). Remove from heat, place on a plate and tent, allowing to rest about 10 minutes.

  7. Toss vegetables together with chipotle sauce.
