Recipe Ingredients for Salmon Stuffed Portabella Mushrooms

12 oz portabella mushrooms
1/2 c 2% cottage cheese
1 c chopped spinach
1/4 c chopped onion
1/4 c chopped red pepper
4 oz salmon
1/2 tsp minced garlic
1 small baked potato

Recipe Directions for Salmon Stuffed Portabella Mushrooms

Chop baked potato with skin into small pieces. Add shredded salmon and chopped vegetables and mix well. Stir in cottage cheese and garlic. Season with ground black pepper. Fill mushroom with mixture and place in preheated oven at 350F. Cook for 15 - 20 minutes, until heated through.
