A light and creamy Pasta dish, great hot or cold.

Recipe Ingredients for Salmon & Spring onion Pasta

200 g salmon fillet
130 g whole wheat penne
8 spring onions, chopped
200 g mushrooms,chopped
1 tbsp creme fraiche
500 ml water
1 salt
1 pepper

Recipe Directions for Salmon & Spring onion Pasta

  1. Bring a pan of water to the boil,add a pinch of salt and the pasta and simmer until tender.

  2. Meanwhile Wrap the Salmon on tin foil and bake for 15mins at 200C.

  3. Once the salmon has cooked, remove any skin and bones and flake into small pieces, set aside for a few mins.

  4. In another pan gently sweat the spring onions and mushrooms in a small amount of water, or use low cal cooking spray. Once they are tender, drain the pasta and add to the pan.

  5. Stir in the creme fraiche,salmon,a generous amount of freshly ground pepper and gently heat for a further 2 mins.

  6. Serve.
