A very nice salad. Original recipe calls for a Light Honey Mustard Dressing, but I've always loved the sweetness of the Raspberry Dressing against the mild taste of the Salmon.

Recipe Ingredients for Salmon Spinach Salad from The Biggest Loser Family Cookbook by Chef Devin Alexander

16 cups Baby Spinach Leaves
3/4 cup Red Onion, slivered
6 tablespoons Ken's Light Options Dressing (Raspberry Walnut)
8 oz. Sockeye Salmon (2 - 4 oz. portions)

Recipe Directions for Salmon Spinach Salad from The Biggest Loser Family Cookbook by Chef Devin Alexander

  1. Lightly mist skinless Salmon fillets all over with olive oil (placed in a sprayer...not a store bought spray that contians propellant) and season with salt and pepper.

  2. Place a non-stick skillet large enough for the fillets to lie in a single layer over medium-high heat. When hot, add the salmon and cook until golden brown on both sides, 1 to 2 minutes per side. Reduce the heat to medium and continue to cook, turning once, until cooked through and pale pin in the center, 2 to 3 minutes per side.

  3. Meanwhile, in a large salad bowl, toss the spinach and onion with the dressing. Divide the mixture among 4 serving plates. Top each salad with a salmon fillet and serve immediately.
