pescatarian version of spaghetti carbonara

Recipe Ingredients for salmon spagetti

4 oz whole wheat spaghetti
2 tablespoons Parmesan cheese
1 red pepper, roasted
2 oz salmon, smoked
1 tablespoon olive oil
1 clove garlic
1/4 chopped onion
1 egg
1/4 cup parsley
1 tsp salt

Recipe Directions for salmon spagetti

  1. cook spaghetti, drain

  2. while spaghetti cooks, saute onion and garlic in olive oil

  3. add salmon long enough to heat through

  4. beat egg, add 1/2 of cheese

  5. chop pepper and parsley

  6. right when you drain the spaghetti, put it right back in the hot pan, add the oil with onion and garlic and salmon, add the beaten raw egg and toss (not on the heat - you want the egg to be heated, but not cooked)

  7. put on plates, garnish with parsley and the rest of the cheese
