Salmon and shrimp with saute'd vegetables

Recipe Ingredients for Salmon & Shrimp

10 ounces Salmon, two filets
6 ounces red bell pepper, chopped (1 cup)
3 ounces red onion, chopped (1/2 onion)
1/2 ounces garlic clove, minced (2 cloves)
4 ounces shrimp (12 shrimp)
6 1/2 ounces canned mushrooms
2 ounces raw spinach
1/4 cup lemon juice
1/4 cup Kens Steak House Lite Dressing Sweet Vidalia Onion
1 teaspoon olive oil
1/4 teaspoon dried dill
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1/2 teaspoon lemon pepper
1/2 teaspoon italian seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder

Recipe Directions for Salmon & Shrimp

  1. In a small bowl add salmon, shrimp, lemon juice and vidalia dressing, mix to cover and set aside

  2. Heat oil over medium high heat

  3. Add mushrooms saute 2 minutes

  4. Add onion saute 2 minutes

  5. Add bell pepper, saute 2 minutes

  6. Add garlic saute 1 minute

  7. Add all seasonings and saute for 1 minute

  8. Remove salmon and shrimp from marinade

  9. Pour marinade over vegetables and saute for1 minute

  10. Even out vegetables in pan and place salmon fillets on top

  11. Cover in spinach

  12. Place shrimp on top of spinach

  13. Cover, reduce heat to low and cook until salmon flakes, about 10 - 15 minutes.
