Recipe Ingredients for Salmon and Salsa

1 ripe tomatoes, finely chopped
2 tablespoons shallot, finely chopped
1/4 red onion, finely chopped
1/2 hot pepper, finely chopped
1/2 jalapeno pepper, finely chopped
1 clove of garlic, finely minced
1/2 red pepper, finely chopped
1/2 tablespoon of balsamic vinegar
1/2 teaspoon of dried basil
1/2 tablespoon of olive oil
1/8 teaspoon salt
1/2 teaspoon black pepper
4 ounces uncooked salmon

Recipe Directions for Salmon and Salsa

  1. Preheat oven at 400.

  2. Combine all ingredients ith the exception of the salmon.

  3. Take a sheet of aluminum foil and place salmon fillet on top. spray lightly with olive and top with salsa. Close the top of the aluminum in a taco shape, leaving enough air for the salmon to steam but closed tightly to avoid juices from leaking. Place directly on the grate or place on a cooking sheet and bake for 45-60minutes.
