This is a great mayonnaise-free salad. Salmon, eaten in moderation has great health benefits. I serve it over a bed of leafy greens, sprinkled with a little lemon juice and olive oil (also heart-healthy). If you're doing well with your calories for the day, add some diced avocado. This also works well with tuna.

Recipe Ingredients for Salmon Salad

7 oz salmon
1 T lemon juice
2 green onions
1 stalk celery
1 roma tomato
1 tsp olive oil
1/2 t black pepper

Recipe Directions for Salmon Salad

  1. Drain salmon and place into a bowl.

  2. Chop celery and slice green onion. Dice tomato. Add to bowl.

  3. Add lemon juice, olive oil, and black pepper.
