A salmon mix on greens with avocado

Recipe Ingredients for Salmon salad

5 oz salmon fillet, cooked
1 T chopped green onion
1 T dijon mustard
1 T light mayonnaise
2 c spring greens
1/2 avocado

Recipe Directions for Salmon salad

  1. Season salmon fillet as desired and bake. Cool in refrigerator.

  2. Break up cooled salmon in bowl with fork.

  3. Add mayo, mustard, green onion, salt and pepper, and mix.

  4. Serve atop the spring greens (add vinaigrette if desired) and with the sliced avocado.
