Pungent red pepper and sweet mango flavor this robust sauce, which accents simply broiled salmon wonderfully. Broiling salmon will perfume your kitchen, so if you prefer, cook the salmon on the grill, over direct heat, 8-12 minutes total.

Recipe Ingredients for Salmon with Roasted Chile-Mango Sauce

3 tsp canola oil, divided
1/2 cup shallot, thinly sliced
2 tsp coriander seed
2 tbsp dried red pepper
1 cup mango, peeled, diced
2 tbsp fresh cilantro, finely chopped, divided
4 cloves garlic, minced
1/2 tsp salt
1 lb salmon fillet, skin removed

Recipe Directions for Salmon with Roasted Chile-Mango Sauce

  1. Position oven rack in upper third of oven; preheat broiler.

  2. Coat a broiler pan with cooking spray.

  3. Heat 1 teaspoon oil in a small skillet over medium heat.

  4. Add shallot, coriander, and red pepper; cook, stirring, until the shallot begins to brown and the spices smell fragrant, 2-3 minutes.

  5. Transfer the shallot mixture to a food processor or blender; add the remaining 2 teaspoons oil and mango; process until almost smooth.

  6. Transfer the sauce to a small bowl; stir in 1 tablespoon cilantro.

  7. Combine garlic and salt in a small bowl; spread the salted garlic on top of the salmon.

  8. Place the salmon, garlic side up, on the prepared broiling pan.

  9. Broil, 3-4 inches from heat, until opaque in the center, 8-14 minutes, depending on the thickness.

  10. Serve the salmon topped with the sauce and sprinkled with the remaining 1 tablespoon cilantro.
