Yield: 2 servings (serving size: 1 fillet and 1/2 cup tomato mixture)

Recipe Ingredients for Salmon with Roasted Cherry Tomatoes

2 cups cherry tomatoes
1 1/2 teaspoons chopped fresh thyme
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, minced
1 Cooking spray
12 ounce salmon fillets (about 1 inch thick)
2 tablespoons fresh lemon juice

Recipe Directions for Salmon with Roasted Cherry Tomatoes

  1. Preheat oven to 400.

  2. Combine first 6 ingredients in a jelly roll pan coated with cooking spray; toss to coat tomatoes.

  3. Bake at 400 for 15 minutes. Add fish to pan.

  4. Bake an additional 10 minutes or until fish flakes easily when tested with a fork.

  5. Serve the tomato mixture over fish.

  6. Drizzle with lemon juice.
