Clean tasting and healthy salad - 1 large portion or 1 small

Recipe Ingredients for Salmon and rice noodle salad

50 grams Spinach
100 grams Grapefruit
30 grams Peppers, Sweet, Red
50 grams Thin Rice Noodles
120 grams Salmon, Atlantic, Wild
2 Teaspoon Soy Light Sauce
2 tsp Sesame Seeds
80 cal Extra Virgin Olive Oil
20 grams Mint
20 grams Coriander

Recipe Directions for Salmon and rice noodle salad

  1. Place rice noodles in hot water to soften

  2. Grill or bake salmon (180 degrees) until nearly cooked through (8-10 mins)

  3. Drain rice noodles and toss 1 tbs Olive oil or sesame oil through them

  4. Place spinach on a plate. Put noodles on top, then arrange vegetables and herbs

  5. Sprinkle soy sauce over the top (don't overdo it!)

  6. Place salmon on top, sprinkled with sesame seeds
