Recipe Ingredients for Salmon Quesadillas

2 oz Salmon, Chinook, Smoked
2 tblsp Reduced Fat Cream Cheese
1 cup(30 g) Spinach
1 tortilla Smart
0.5 medium raw Bell Pepper Red
0.5 small Onions
1 1tsp Vegetable Oil, Canola

Recipe Directions for Salmon Quesadillas

  1. Preheat oven to 300 degrees.

  2. Sautee bell pepper and onion in canola oil until tender, about 5 minutes, on medium heat.

  3. Put tortilla on a cookie sheet (I used aluminum foil on the cookie sheet). Spread cream cheese on the tortilla.

  4. Put spinach, salmon, and bell pepper and onions on one half of the tortilla.

  5. Fold tortilla in half and bake in the oven, 4 minutes, then turn over and bake for another 4 minutes (basically just long enough to toast the tortilla and warm up the salmon.
