Salmon Quesadillas Recipe

It may not be super low in calories, but I came up with this dish for a quick lunch at home. I used the pouch salmon for extra convenience. This can feed 2 adults, or several hungry youngsters!

Recipe Ingredients for Salmon Quesadillas

5 oz salmon
1/2 cup shredded mild cheddar cheese
4 whole wheat tortillas
1/2 cup chopped bell pepper
2 tbs taco sauce

Recipe Directions for Salmon Quesadillas

Layer 1/2 the salmon, cheese and bell pepper on a tortilla. Top with taco sauce and the other tortilla. Heat in a quesadilla maker or in a hot skillet 3-4 minutes til heated through. Slice into wedges and serve with your favorite toppings and a side of crunchy carrots with cool ranch dressing and sliced apples for a kid friendly lunch.
