A tasty mix of two great things: salmon and pesto

Recipe Ingredients for Salmon with Pesto and Cherry Tomatoes

4 salmon fillets
3/4 cup pesto
3/4 cup cherry tomatoes

Recipe Directions for Salmon with Pesto and Cherry Tomatoes

  1. Cut the skin off the salmon fillets.

  2. Grease the bottom of a baking pan with oil or cooking spray.

  3. Place the fillets skin side down in the pan and cover the side facing up with pesto (either store-bought or homemade: for the latter see my pesto recipe).

  4. Cut cherry tomatoes in half.

  5. Press tomato halves onto the pesto-covered side of each salmon fillet.

  6. Bake in an oven heated to 350 degrees for 20 minutes or until salmon is cooked through/flakes with a fork.
