Salmon fillet poached with zucchini, leek and carrots in papillotte

Recipe Ingredients for Salmon in papillotte

6 oz salmon fillet
2 medium zucchini, sliced
2 medium leek, sliced
1 tbsp fennel seed
1 tsp black pepper
2 small carrots, sliced
1 tbsp lemon juice

Recipe Directions for Salmon in papillotte

  1. Preheat the over at 350F

  2. Prepare the papillottes by folding in two two large aluminium sheets.

  3. Place the salmon fillet in the center of the papillottes and add the fennel seed, the black pepper and the lemon juice (lemon slices is great too).

  4. On top of the fish, add the sliced zucchini, leek and carrots.

  5. Close the papillotte by folding the sheet another time and make sure to roll the corner so the cooking juice does not leak.

  6. Put in the oven for about 10-12 minutes or until the salmon has lost its transparency.
