Recipe Ingredients for Salmon a la Nage

8 oz Salmon, Atlantic, Wild
4 spear, medium (5-1/4" to 7" long) Asparagus
0.25 cup Frozen Sweet Peas
2 tbsp Butter
4 fl oz Wine, Table, White
4 tbsp chopped Shallots

Recipe Directions for Salmon a la Nage

Saute 1 T. butter with chopped shallots. Deglaze pan with white wine. Add 1/4 C. chicken stock. Add salmon filets and cover with lid. Cook for 2 min. Add the other 1 T. butter, sliced aspargus, and frozen peas. Cover again and cook for another 2 minutes. When vegetables are al dente and salmon is just cooked through, add chopped herbs: tarragon, chive, parsley, and dill.
