Salmon with Mediterranean Flavors

Recipe Ingredients for Salmon with Mediterranean Flavors

28 oz salmon, fillet
1/4 cup sun dried tomatoes, in oil, halved if large
1/8 cup fresh basil
1/4 cup black olives, pitted
3 cloves garlic, thinly sliced
4 tbsp olive oil

Recipe Directions for Salmon with Mediterranean Flavors

  1. Heat oven to 400 degrees. Place the salmon on a board, skinned side down. Use an apple corer to make holes in fillets.

  2. Flatten out the tomatoes and place a basil leaf, an olive and a piece of garlic on each. Roll up and place a roll in each of the holes in the salmon. Season with salt and pepper

  3. Place salmon on a lightly oiled baking sheet. Drizzle with oil and bake 6 to 8 minutes, until medium rare (the thickest part will be slightly springy when pressed).
