Quick & easy but the sauce really makes this a winner!

Recipe Ingredients for Salmon with Maple Dijon Sauce

16 oz. salmon fillets
1/4 cup Splenda Brown Sugar
1 tbsp cracked black pepper
1/2 tsp Kosher salt
2 tbsp Extra Virgin olive oil, divided
1/4 cup maple syrup
1/4 cup Dijon mustard
2 tbsp chopped fresh dill

Recipe Directions for Salmon with Maple Dijon Sauce

  1. Combine brown sugar, cracked black pepper and kosher salt in a bowl. Mix well. Rub the salmon fillets with the brown sugar mixture, making sure to use it all. Cover lightly with plastic wrap and refrigerate for about 15 minutes.

  2. Combine the maple syrup, mustard and fresh dill in a small mixing bowl & set aside.

  3. Coat the bottom of a shallow baking pan with 1 tbsp olive oil; place salmon in the pan and drizzle with remaining olive oil. Bake for 12 minutes or until cooked to desired doneness.

  4. Remove from baking pan, plate salmon and drizzle a small amount of maple dijon sauce and pass remaining sauce.

  5. I wish I could take credit for creating this recipe but I can't. I am working on ways to decrease the sugar content. This recipe makes a good amount of sauce, so it's easy to just use less sauce on the fish. Unfortunately, I don't think there's any good substitute for good maple syrup!

  6. This recipe can easily be halved.
