This is a recipe I have successfully adapted to make with flaxseed boiled in water in place of the egg and rice milk instead of cow's milk, since I have egg and milk allergies.

Recipe Ingredients for Salmon Loaf

16 oz. salmon, canned, drained
2 c. bread crumbs
1 T. onion, chopped
1 T. olive oil
1/2 t. salt
1/2 c. rice milk
1 T. flaxseed
1/3 c. water
1 stalk celery, chopped

Recipe Directions for Salmon Loaf

  1. Boil flaxseed in water for five minutes or until the consistency of raw egg whites.

  2. Combine salmon, bread crumbs, onion, olive oil, salt, rice milk, flaxseed mixture, and celery.

  3. Bake in a small Corning Ware dish at 350 degrees for 34 to 40 minutes.
