Great dinner loaf--the nutritional value for rice just pulled up a cup uncooked, so I replaced it with 1/3 cup uncooked to make the nutritional value correct. Actually you need 1 cup of cooked rice.

Recipe Ingredients for Salmon Loaf

3/4 cup celery, chopped
1/2 cup onion, chopped
2 tbsp olive oil
6 oz canned salmon, wild Alaskan, skinless, boneless
1 egg, slightly beaten
1/3 cup cooked brown rice
1 tsp dried dill weed
1 pepper to taste

Recipe Directions for Salmon Loaf

  1. Saute vegetables in oil until translucent. Add salmon, rice, egg, dill and pepper. Mix well.

  2. Pour into a nonstick loaf dish and bake at 350 for 40 minutes.
