Sauted salmon on a bed of lentils

Recipe Ingredients for Salmon with Lentils

1/2 pound lentils
2 cups onion, chopped
2 cups leeks, chopped
1 1/2 cups celery, chopped
1 1/2 cups carrots, chopped
1 1/2 cups chicken broth
1 tbsp garlic, minced
2 tbsp tomato paste
2 tbsp red wine vinegar
32 oz salmon fillets

Recipe Directions for Salmon with Lentils

  1. Place lentils in a bown and cover with foiling water. Set aside for 15 minutes then drain.

  2. Heal small amount of oil and add onions, leeks, herbs, and cook for 10 minutes. Add garlic and cook 2 more minutes. Add drained lentils celery carrots chicken stock and tomato paste. Cover and simmer for 20 minuts or until lentils are tender. The the vinegar and season to taste.
