Yum! One of my favorite, quick dinners!

Recipe Ingredients for Salmon kebobs

10 oz. salmon, cubed
1 c. brown rice
1 medium onion, cued
8 oz. cherry tomatoes
1 large zucchini, thick sliced
8 oz. mushrooms
2 T olive oil
1/2 T butter (optional)
1 pinch salt
1 pinch pepper

Recipe Directions for Salmon kebobs

  1. cook whole grain brown rice (tex-mex multi-grain variety recommended) per package directions, add butter if desired

  2. thread salmon and vegetables onto kebob skewers

  3. spray skewers lightly w/ olive oil

  4. sprinkle with salt & pepper

  5. cook skewers on grill, or in oven @450 for about 6 minutes

  6. serve cooked salmon & veggies over rice. Yum!
