from Prevention.com. I reduced the oil by half. The original recipe used 1/4 cup oil. Time 20 min.

Recipe Ingredients for Salmon and Herb Penne-8 ww pts.

4 oz. whole wheat penne pasta
1/8 c olive oil
1 c grape tomatoes, halved
5 cloves garlic, minced
1/2 c white wine (or low sodium chicken broth)
3/4 lb. salmon fillet, bonless, skinless,cut into bite size pieces
2 T basil, fresh, chopped
1 T oregano, fresh, chopped
1 T capers, rinsed and drained

Recipe Directions for Salmon and Herb Penne-8 ww pts.

  1. Prepare pasta per pkg. directions

  2. Heat oil in large skillet over medium-high heat

  3. Add tomatoes and garlic and cook until fragrant (:30 sec-2min)

  4. Raise heat to high and add wine, salmon, basil, oregano, and capers and cook until salmon is just opaque, about 4 min.
