Recipe Ingredients for Salmon Gyros a la Guy Fieri

6 oz greek yogurt, fat-free
1/2 c cucumber, seeded and diced
1/4 tsp dill
1 c tomato, seeded and diced
1/2 c red onion, sliced
1/2 c cucumber, seeded, sliced
1/2 c roasted red pepper
1/2 c kalamata olives
1/4 tsp oregano
1 tsp lemon juice
1 tsp vinegar, balsamic
2 c arugula
6 oz salmon
2 whole wheat Weight Watchers pita pockets

Recipe Directions for Salmon Gyros a la Guy Fieri

  1. Mix together yogurt, cuke & dill, set aside.

  2. Mix together all other ingredients to make salad - except for arugula and salmon - let sit for at least an hour.

  3. Broil salmon.

  4. Serve salad on a bed of arugula, with salmon and halved pita to one side. Put salmon, arugula and yogurt mixture into pitas.
