Recipe Ingredients for Salmon Goat Cheese Omelet

1/4 onion
1/4 fennel bulb
1 oz salmon
1 teaspoons butter
1 egg
2 egg whites
1/4 oz goat cheese
1 pinch salt
1/2 cup arugula

Recipe Directions for Salmon Goat Cheese Omelet

  1. Saute onion and fennel in a pan.

  2. Add flaked chunks of leftover salmon until warm. In a separate pan melt 1 teaspoons of butter over medium low heat. 3 eggs. (can do 1 egg and 2 egg whites if you want) cook omelets over low heat. salt eggs as they are cooking. Add cheese, salmon, fennel and onion mixture to eggs. add in handful of arugula or spinach.
