Recipe Ingredients for Salmon with fruit salsa

16 oz Salmon, Atlantic, Farmed
1 fruit (3-3/4" dia) Grapefruit
1 avocado, NS as to Florida or California Avocados
0.25 cup chopped Red Onion
0.13 cup Coriander Leaves
0.5 pepper Peppers, Jalapeno
0.13 cup Lime Juice

Recipe Directions for Salmon with fruit salsa

  1. Brush salmon with oil, sprinkle with salt, pepper, and chili powder. Roast in 375 oven for 18 min.

  2. Peel and segment grapefruit over a bowl to reserve juice. Cut segments into chunks and remove seeds. Cube avocado. Mince red onion, jalapeno, and cilantro. Add to grapefruit juice. Add lime juice.

  3. When salmon is done, divide into 2 portions, top with salsa, and serve.
