Recipe Ingredients for Salmon Fishfingers / Douradinhos de Salmao

106 g salmon
211 g potatoes
1 tbsp green onion
1 tbsp sesame seeds
1 tsp olive oil

Recipe Directions for Salmon Fishfingers / Douradinhos de Salmao

  1. boil and mash the potatoes

  2. let the mashed potatoes cool

  3. make lemon juice and zest

  4. pour juice over fish filet (no skin or bones)

  5. microwave on high until fish is tender and flakes easily

  6. drain of liquid

  7. flake fish into a bowl

  8. add the mashed potatoes, the chopped herbs and the zest and mix

  9. line a baking sheet with baking paper and sprinkle with half of the sesame seeds

  10. top with the fish and potato mixture and flatten with a knife to a 2.5cm deep

  11. cut into chunky fishfingers and separate them

  12. sprinkle remaining seeds

  13. cover and pop into freezer for 15mn to firm up

  14. pre-heat the oven to 220C

  15. drizzle the fish fingers with oil and cook for 20 minutes

  16. serve with lemon wedges and brocoli
